Black Beans & Rice Cookup

Ingredients

  1. 1 tin Cuisine Black Beans
  2. 2 cups Cuisine Parboiled Rice
  3. 2 cups water
  4. 4 cloves garlic minced
  5. 1 onion finely chopped
  6. 1 tbsp minced ginger
  7. 4 pimentos finely chopped
  8. 1 bundle chives chopped
  9. 4 shadon beni leaves finely chopped
  10. 1 bay leaf
  11. 1 tbsp coriander seeds
  12. 2 tbsp roucou (annatto extract)
  13. 2 tbsp oil
  14. salt & black pepper to taste

Method

  1. Use the broad side of a knife to crush the coriander seeds
  2. Toast the spice until it goes fragrant
  3. Allow the spices to toast in the oil for 30 seconds before adding aromatics: onion, pimento, ginger, garlic, chives, bayleaf. Season with salt and black pepper then sauté for 3 minutes
  4. Sauté the aromatics until onions are translucent.
  5. Add roucou for color and flavor
  6. Add the Cuisine Black Beans to the party
  7. Rule of thumb: Equal parts water to equal parts rice.
  8. Cover then allow to cook on low heat until rice is tender.
  9. Add fresh shadon beni for some great herb flavor
  10. Fresh herbs always bring an added layer of flavor to rice dishes.
