STEWED CHICKEN FAN RECIPE BY SHURLON FREDERICK

Chicken (mixed parts)

Diced Potatoes

Green pigeon peas

Cubes Carrots

Diced Tomatoes

Finely chopped Pimento peppers

Hot pepper (optional)

Onion

Garlic

Chive

Chadon beni

Ginger

Thyme

All-purpose seasoning

Salt

Black pepper

Angostura bitters

Brown sugar

Oil

Cooking butter

Turmeric powder

Coconut milk

1 bay leaf

Method

Season cleaned chicken with garlic, ginger, salt, black pepper, turmeric powder, bitters, all-purpose seasoning, thyme, chive.

In pot, heat oil, add sugar stirring frequently until desired color.

Add chicken and mix well, cover and simmer for 5-10 mins or until the water is dried out.

Add remaining ingredients, stir, cover with water, and bring to a boil, then cover and  reduce to simmer for 30mins

Season to taste and enjoy

* chadon beni adds more flavor to your dish when added almost to the end of cooking
